Breakfast Surf Quesadillas
Ingredients:
2 Flour Tortillas
2-3 Eggs
1 teaspoon of Butter or Vegetable Oil
2 table spoons of cheese (use your favorite cheese, cheddar, Provolone, etc.)
Bacon, Ham, Sausage (Some kind of breakfast meat, I always go with bacon)
Avocado, Salsa, Sour Cream, Pico de Gallo (what ever side you want)
Cooking Tools:
Nonstick Skillet
Bowl
Spatula
Plate
Fork
Directions:
First, you need to cook the meat, if you are adding meat to the quesadilla. I always use a little bit of bacon in my quesadilla. Heat up your Nonstick Skillet, then lay the bacon strips on the skillet. Let them cook on both sides until ready. Once they're done, remove they from the skillet with the fork and place them on the plate. Crack the eggs into the bowl and scramble (whisk) them with the fork, then poor them into the hot skillet. The goal is to make scrambled eggs for the quesadilla, when its done cooking remove the eggs from the skillet and place them on the plate with the bacon. Then add the butter to the hot skillet, let it melt all around, then place the first floor tortilla on the skillet. After that place the eggs, bacon and cheese on the tortilla in the skillet. Then place the second tortilla on top, you are looking to melt the cheese inside the quesadilla and trying to get a golden brown color on the tortilla. Use the spatula to help flip the quesadilla. When all ready remove it from the skillet and onto the plate. Then cut the quesadilla into quarters, then serve with pico de gallo or salsa, avocado, and sour cream on top.
